A new Japanese joint serving dishes powered by fresh, seasonal produce has opened at 25 Mohamed Sultan Road.聽

Fukui, led by a chef who claims to have served the late Lee Kuan Yew, is an omakase delight that鈥檚 offering meals that stretch up to 13 courses, including dessert. Maguro bluefin tuna sushi and its Anago sea eel sauce are among the stars of its menu.聽

Guests seated at the sushi counter may also be treated to a liveaction by head chef Nick Pa鈥檃n himself, preparing the great amberjack fish Kanpachi roasted in traditional Warayaki-style using straws.聽

Pa鈥檃n, who has over 20 years experience under his belt, is the man behind the menu at its 3,000-square-foot (280sqm) zen refuge since last month. From Monday to Saturday, guests walk through its wood-accented passageway and into the restaurant. Two private dining rooms can accommodate up to 12 people.聽

There are 10 different sets to choose from. The ingredients are mainly sourced from Hokkaido, Tokyo, and Saga prefectures.

Meals start at S$88 for a six-course meal or S$158 for seven. They may include appetizers, sashimi, a grilled dish, a mini Bara Chirashi (seafood rice bowl), soup, and a dessert.

Beyond that, seven-course dinners range from ($188) to 13 (S$338), the most expensive of which consists of an appetizer, starter, a Warayaki-style dish, uni (sea urchin), sashimi, consomme (clear soup stock), grilled dish, hot dish, tempura, steamed dish, sushi, soup and dessert.

Japanese whiskies, wines and sake from top sake breweries like Dassai and Juyondai are served to go with the feast.聽
